微环境中脂肪酶催化椰子油水解作用研究

Abstract在AOT/异辛烷/磷酸盐油包水型微乳液中,研究了脂肪酶催化椰子油的水解反应.并与聚乙烯醇(PVA)-椰子油乳化液体系进行了比较.结果表明,微乳液的结构对酶的活性有很大影响,微乳液中酶促反应的最佳条件为pH=7.5,WO=11,T=35 ℃.微乳液中的酶促反应符合米氏方程.由于微乳液体系中油水比界面很大,酶促反应速率明显高于其在乳化液中的反应速率.
