Abstract

一种纳米硅基氧化物SiOx保鲜果蜡及其生产方法,原料配方百分含量为:原蜡组分10~25%;水55~80%;乙醇或异丙醇5-18%;丙二醇或丙三醇0.2~3%、吐温0.2~2%;纳米硅基氧化物0.05~1%、硅烷偶联剂0.001~0.02%、水溶性硅油或二甲基硅油0.1~2%;酸碱调节剂0.5~3%。步骤为:将原蜡组分溶解后,与水和乙醇或异丙醇混合均匀,pH7.0~9.5,过滤除杂,得果蜡基液;将丙二醇或丙三醇及吐温、硅烷偶联剂、纳米硅基氧化物、水溶性硅油或二甲基硅油混合均质乳化,得纳米硅基氧化物分散液;将其混合pH7.0~9.5,再进行均质乳化即得成品。本发明增加了果蜡的气调性、抑制水分散失、增强蜡膜持久性、符合食品绿色安全和机械化打蜡要求。
